Chromatography can be used

Chromatography can be used for separating many different chemicals. You could try separating the pigments in leaves, showing that the red colors that we see in autumn are always there, just covered up by chlorophyll. At this time of year, that will take some creative thinking, but you should be able to get some leaves that are still green. You could also try to identify the pigments in vegetables, or even in a vegetable drink, such as V-8 juice. Again, it will take some creative thinking, but that is the fun of science fair projects.
