What are the white, stringy things you see on the yolks of chicken eggs?

Answer:

They are chalazae, strings of protein that hold the yolk in the center of the egg, so it will not bump into the shell and be damaged. Chalazae are very visible in fresh eggs, but they become less and less apparent with time, so you can tell how fresh an egg is by looking for them.
